Monday, January 30

Last week's menu plan was an overall success. The spicy tuna wraps were super yummy, and the jambalaya I could eat every night. It definitely got us eating better food, and saved money! It wasn't perfect... we still haven't tried the salmon salad pita pockets, and there was one night when I just left everyone to find their own food, ha!... but it helped for sure.

Here is what is on the menu for this week:

Hungarian Mushroom Soup
Creamy Garlic Spaghetti Squash Casserole
Shepherd's Pie
Spinach Enchiladas
Terrible Taters
Ratatouille with Cheese Ravioli

Buttermilk Oatmeal Muffins
Turkey sausage, spinach, mushroom & zucchini egg cups
Meatloaf Muffins

I have already whipped up some of this ahead of time, and that spaghetti squash casserole smells amazing! I hope it is well received (not everyone is in full support of me making more veggie-centered dishes yet, but they will come around!)

  1. That Creamy Garlic Spaghetti Squash Casserole sounds delicious. Have you tried it before? We spent a year eating vegetarian several years ago. It wasn't all that hard once I got into the swing of things. We went back to eating meat but a lot less than before. I still make a lot of the vegetarian dishes I developed or discovered during that year. In fact, one of our favorites is on our menu this week - black bean patties with avocado cream sauce and corn relish. The link is in my menu post:

  2. Make sure that you hire a chef and a waiter that has ample experience and are very efficient.
